After 50 years in the food and beverage industry, including the incredible experience creating and operating Takosushi, Kevin decided to embark on what will most likely be his last restaurant adventure. A team of talented young chefs and staff will enjoy a vested interest in Polipo, taking the helm when he really retires! As a child living in Europe, Kevin loved the understated neighborhood restaurants that were gathering, eating and drinking spots for family and friends.

In Italy, a Trattoria is a local bar and restaurant with comfort food. Nothing fancy, just plates full of unpretentious food and friendly service. Italy’s stamp repeats in Kevin’s passport for good reason. Homemade pasta, mozzarella, ricotta, fresh baked bread and desserts bringing people together to share stories and life. Polipo is different.
